Sailing Away


Arr! More pirate lunches, ahoy!


In this lunch:

Our little pirate friend is hanging out on a gluten free ham and cheese sandwich. X marks the spot in a square of gf pie, which Beaker declared the best EVER (not homemade though - I can't remember the brand name, but they are little individual pies sold at a local store). And a treasure chest of golden crunchy 'coins' is tucked in below the X.


I really love the silicone tray I used to make this frozen Greek yogurt skull. It gets a ton of use here! I keep a bag of frozen yogurt shapes in the freezer, and when the kids want a cold snack they can just pull a skull or some bones out of the bag and enjoy. I love how freezing yogurt makes it seem like a sweet treat dessert, but it has a nice pack of calcium and protein, too! And freezing it into shapes is just an extra fun bonus.

Hotel Transylvania 2: Baby Dennis

My kids love the first Hotel Transylvania and are looking forward to the sequel, which is being released this week. Beaker has been watching the previews, waiting impatiently until we are able to go see the movie. He was quite put out when I explained that we have to wait until the movie opens before we can see it. "Just tell them to open it now! Isn't that what you do?" Uh, no kiddo. Mama isn't a mover and shaker in Hollywood. I'm not quite magic!

In the meantime, he loved this Baby Dennis lunch I made for him!


In this lunch:
Gluten-free open face (get it? face? ha!) sandwich
Carrots
Rice crackers
GF mini pretzel bites
GF chocolate chip cookie
Grapes



Baby Dennis is a simple sandwich built on a base of Udi's gluten-free bread and cheese with thin sliced turkey lunchmeat. His bright orange curly hair is made with carrot coins, and his eyes are mozzarella cheese with food dye details painted on.

Yar! Pirate Lunches Ahoy!

As many of you already know, September 19th is International Talk Like a Pirate Day!

Since it was on a Saturday this year, we celebrated with a whole week of piratey lunches for the littlest of the Chaos Kids. He is digging this whole lunch at school thing!


For Monday, Beaker had a little pirate sailing away in an allergy-safe dinghy to find the treasure on the fruity isle.

This lunch includes:
Gluten-free half sandwich on Udi's bread
Baybel mini cheese pirate
Schar gluten-free shortbread cookie sun
Orange island with carrot sticks
Gluten-free cracker crisps


(The cheesy letters covered up the place were I dropped a little food paint on the bread...)

First Day of School

Time to break out the books, bags, and bento gear - it's back to school they go!

Every year I marvel at how fast the time went. This year is not really different! Beaker is in full day school for the first time, so this is his first experience with having lunch at school every day. Of course, with his allergies that means taking a lunch every day. So far it looks like the biggest challenge is going to be getting him to sit still and eat his lunch, instead of shoving a few bites in his mouth and then rushing out to play at recess with his new friends!

For the first day of first grade, Beaker took a Planet Box Rover full of deliciousness for lunch and snack:

Lulu is in fourth grade now, and still thinks she is too grown up for cute lunches, so this may be one of the few I get to make for her this year:

Luckily for me, Bean still loves decorative lunches! Bean also cosplayed Hermione Granger for her first day of seventh grade. This kid is all sorts of awesome!

Of course, Brick and G-man are big high school kids now. Neither of them wants lunches packed - apparently the high school has a pretty decent cafeteria and both prefer to buy lunch rather than carry a lunch kit with them daily. G-man is a Freshman now, and Brick is a Junior (and talking about colleges and jobs!)

Okay, but seriously though... where did the summer go?! How is it already September? And how did my itty bitty babies get so big and grown up so fast?!

This year I have two kids at the elementary school, one at the middle school, and two in high school. HIGH SCHOOL, people. That's like, almost an adult! How is it even possible for my kids to almost be adults? I'M not even an adult! Okay, technically I might be an adult, but whatever, yo. You can't make me adult. If you need me, I will be hiding in my blanket fort with my coloring book and a fresh box of crayons.

Anyway. This is what the Chaos Kids look like now!

Zoo Day

As the last school year came to a close (yeah, yeah... I'm more than a little behind in sharing these lunches!), Beaker's small school had a field trip to the zoo for the entire school. It was pretty neat to see all of the students from the whole school, kindergarten through high school, there together with their families! Lulu tagged along with us, and Beaker was thrilled to introduce her to his kindergarten teacher and the friends he had met at school.

And of course there was lunch...


Beaker has a cantaloup field for a friendly giraffe, and grape and strawberry stripes for a silly zebra. Enter the zoo through a gluten free sandwich on Udi's bread, with cheesy letters and animals greeting you at the carrot stick gates. Smoked gouda cheese with rice crackers are hanging out in the foliage.


He thought a few of his animal friends should check his lunch out to make sure it was safe before we could close it all up. The zebra approves, but the lion needed a closer look.


Lulu prefers her lunches with a little less flair, so she has a pretty toned down version for hers. Carrots with ranch, cantaloup, strawberries, a sandwich, and rice crackers with both smoked gouda and spreadable cheese make up her meal.

Perfect Parade Lunch

#throwbackthursday much? Ha!

I actually made these lunches close to a year ago, and never got around to posting them. I was just poking around, trying to convince myself to get back into the swing of blog, and stumbled over this draft from last summer.

It's Parade Season again here, which means several lunches on the run for Beaker and the Chaos Leader (aka Me). Bean and G-man are both in the marching band at school, which makes Beaker and I their personal cheering section.

The first Parade Season after Beaker was diagnosed with food allergies, I misjudged how long the parades can be and only packed Beaker a light snack. Hours later he was hot and starving and miserable, and there was nothing anywhere nearby that I knew was safe to feed him. Never making that mistake again! 

These tasty on-the-go lunches I packed up for a parade last year:


Each has a cup of tuna fish tossed with sour cream and mayo, topped with pepper. The little spoon is perfect for scooping the tuna onto the rice crackers - delicious, and way more fun than a boring tuna sandwich!

The lunches also include mini pickles, blueberries, orange slices, and cut fruit bars - an allergy safe Enjoy Life bar for Beaker and a NutriGrain bar for me.


As you can see from the pic, the Easy Lunchboxes are completely perfect for a curbside picnic! They fit easily inside a regular insulated lunch bag, with an ice pack tucked inside to keep the tuna salad nice and cold. The whole lunch was easily balanced on Beaker's lap, so he could watch the parade while happily eating his lunch. This is one of my favorite things about Easy Lunchboxes - they're perfect for on-the-go meals and fit everything neatly in one container, without a bunch of fiddly pieces to juggle.

SO much better than hauling a hangry kid around!

A Day At The Pumpkin Patch


A few days before Halloween, Beaker went on his very first field trip with his kindergarten class. They went to a local pumpkin patch for a day of fun. There was a petting zoo with llamas, goats, chickens, and rabbits; a big hay bale maze and a giant hay bale pyramid to climb on; and they went on a tractor pulled hay ride out to the pumpkin fields where each kindergartener was able to choose a pumpkin to take home. Despite the wet weather, Beaker had a blast. Luckily the rain mostly stopped shortly after we arrived, leaving us with wet, muddy, soggy ground but not much falling from the sky. It worked out pretty nicely, and was mostly dry enough by the end of the morning for Beaker to be able to eat some of his lunch outside, instead of huddled in the car.


For lunch, Beaker has:

A sandwich on a Schar gluten free roll with cheese flowers
A "Jack O' Lantern" clementine
Carrot coins
Gluten free crisp crackers
Grapes
Candy pumpkins


His lunch is all packed up in an Easy Lunchbox container, which is perfect for picnics. The flat construction makes it easy to hold on your lap outside, and the simple construction means that when the rain picked up again we were able to quickly snap the lid on to keep his meal dry.

Butterfly Tin

Sometimes making a meal special involves just taking tiny steps. Like putting it in a different kind of dish or cutting into fun shapes.

For this summery meal, I put Beaker's lunch into a muffin tin. They're kind of perfect for little kid lunches, actually. The small cups limit portion sizes to amounts exactly right for little bellies, and they naturally keep foods from touching (which is often important to my little guy). It's a low-effort way to put a little extra punch in lunch!


This is a loosely butterfly themed, gluten free muffin tin lunch. On the top row, Beaker has carrot discs in the first cup of the tin, EnerG allergen free pretzel rings and Enjoy Life chocolate chips (tucked into a butterfly shaped silicone cup) in the second, and mini sausages in the third. On the bottom row, he has watermelon balls, butterfly shaped apple slices, and ketchup in a silicone flower cup.


Definitely a Beaker-Approved lunch! His favorite part was the butterfly apple slices. They were pretty easy and fast to make. Just cut an apple into slices and use a mini cookie cutter to pop out the shapes, then brush with a bit of fruit juice to keep them from browning. Works like a charm and makes them just the right size and shape for little hands to hold.

No Nuts? No Problem!



"But what will we feed them?!" The rallying cry heard all around, as more schools move toward a peanut and nut free system to ensure the safety of those suffering severe allergies. "What will we feed them, if we can't send peanut butter?"

I can understand the panic. I have a kid who eats a very limited diet due to severe food aversions, and one of the very few foods he will consistently eat is peanut butter. But all of that pales significantly in comparison to what a parent feels when they send their allergic child off to school. They are literally putting their child's life in the hands of others. It is scary! Nut and peanut free schools are a great thing for those who would suffer greatly if exposed to those allergens.

For us now, being nut and peanut free is a normal thing. Beaker's nut allergy is limited to hazelnuts and is thankfully fairly not severe, but we have plenty of friends with severe nut and peanut allergies, and we take every step we can to keep them safe. We've found plenty of delicious foods that contain no nut or peanut products, and I am happy to share some safe lunch packing ideas. Hopefully this list will help!

* Nut Free Spreads - Got a kid who really loves peanut butter and won't eat much else? Try a safe alternative spread! Sunflower seed butter is our favorite, and Sunbutter brand is becoming pretty easy to find in stores. WowButter, made with soynuts, is another good option. Both are very similar to peanut butter in both taste and texture, and have a pretty decent protein content. Try them on a sandwich with jam, or rolled up in a tortilla with banana and honey. Anything peanut butter can do, these safe alternatives can do better!


* Serve Up Soup - A Thermos is a great way to keep your hot favorites nice and hot for lunch! It only takes a few minutes in the morning to heat up a small pan of soup and warm a thermal container with some hot water, and it will keep the lunch deliciously warm until it's time to eat. We also love our Thermos for packing favorites like macaroni and cheese, ravioli, and spaghetti for lunch. Whenever I make a large pot of soup or such, I tuck a few small portions in quart sized freezer bags and stash them in the freezer. Then the night before I plan to send a 'hot packed lunch', I pull out the portion bag and tuck it in the fridge. By morning it is thawed out and ready for a quick reheat on the stove. Some chilled fruit and crackers are perfect on the side!


* A Twist on a Classic - My kids don't like tuna fish or chicken salad on sandwiches, but put it in a cup with some crackers on the side for scooping and suddenly it's the best lunch ever! I make mine with finely diced sweet onion, dill pickles, mayo and mustard, and just a dash of black pepper, and serve it up with either Ritz or rice crackers. This is one of Bean's favorite lunches!


* Do-it-Yourself - There is a certain brand of pre-packaged lunch product available in stores which is super popular among kids, and it's easy to see why. Putting your own food together out of separated ingredients is fun! The unfortunate side is that these boxed products are often very high in sodium and sugar (and let's not even talk about the inflated price tag!) With a few silicone cups and some simple ingredients, you can make your own version at home for a fraction of the cost and with much better nutrition in mind. The basic cracker-stacker includes crackers with your choice of sliced cheeses and meats, or you can try a few different favorites. Like nachos with cheese sauce and salsa, or fun mini DIY mini pizzas with a flatbread crust, marinara sauce, and choice of toppings on the side!



* Roll it Up - For a quick and easy protein, take regular lunch meat and cheese and just roll them up! The tube shape is easy for small hands to hold, and more fun to eat than any old sandwich. You can also mix this up by cutting the rolls into bite sized pinwheels.


* Let's Do Brunch - Not just for weekends anymore! Mix it up and pack a bit of breakfast for lunch. French toast, pancakes, and waffles all make excellent lunches. They're especially fun when cut into sticks and packed with a bit of syrup for dipping! Try adding some fruit and a hard boiled egg on the side for a well balanced meal.


* Beans, the musical fruit - Beans are an excellent, and often under utilized, source of healthy essential proteins. Bean dip with tortilla strips, cold bean salad, bean burritos - there are so many things you can do with beans for a nutritious and delicious lunch!


* That's a Wrap - Transform a boring sandwich or salad by tossing the ingredients into a tortilla and rolling it up into a wrap! If you want tasty sandwich or salad pinwheels, try rolling the wrap up tightly the night before, wrapping up with plastic wrap to keep it in place, and chill it overnight in the fridge. In the morning, slice into delicious and pretty pinwheels.


* And Speaking of Salad - Not fans of regular green salads? Try pasta salads instead! Toss your favorite whole grain pasta or tortellini with some olives, mozzarella, and other tasty ingredients for a delicious meal with plenty of vitamins and protein.


* Kid Favorites, Cold - Chicken nuggets and hot dogs both taste surprisingly good when served cold in a lunch box. Especially with their favorite sauce on the side for dipping! Pizza and grilled cheese sandwiches are two other favorites that are great for a cold lunch. Try it out - they might surprise you!


* Dip it, Dunk it, Scoop it - Avocados are a great source of healthy essential fats, and guacamole is great for scooping. Make your own by adding diced onion, lime, lemon, and garlic to a cut up avocado and mix together. Pack it with tortillas, crackers, or veggies for dipping. You can also try packing in a nut-free butter spread in a cup with apples, carrots, and bananas for dipping. Hummus is another excellent dip to pack as the protein in a lunch, and very good with cucumbers and pita strips.

Food Allergy Awareness Week

Did you know...?

As most of my regular readers know, my four year old is allergic or sensitive to six of the Top 8. He is also highly allergic to garlic, which isn't in the Top 8 and isn't required to be labelled for in the US, and he has cold induced cough variant asthma and cold uritcaria (which causes hives in response to exposure to rapid changes in temperature from warm to cold). We keep him safe by being very careful with his food - always reading ingredients labels, never giving him anything we aren't sure of, carefully washing hands and surfaces to prevent cross contamination - and by carrying a pair of Epi-Pens, his inhaler, and allergy medicine with us wherever we go. We also make sure that his skin is covered fully anytime it is cold and use extra coverage if it's raining.

My 11 year old also has some allergies - most notably an allergy to latex, and to multiple fruits and vegetables (strawberries, mangoes, pineapple, cantaloupe, and cucumber in particular). She has been loosely diagnosed with oral allergy syndrome - a condition which causes mouth burns and rashes with exposure to raw fruits. Anti-histamines are very helpful for her when she is accidentally exposed, and we take care to watch for natural fruit juice flavorings in food ingredients to help prevent reactions. Luckily she is pretty proactive about her own health and is able to read ingredient labels on her own now.

Ever since Beaker and Bean were diagnosed last year, I have tried to use this blog as an example to other parents of how you can still have fun with food and keep kids safe, even with multiple serious food allergies. I post some of the lunches that I make for Beaker, both as a creative outlet for myself and to give others ideas for preventing allergies from taking all of the fun out of food. I also love to share any new tips or good products that I come across that might help others out.

Food allergies can be scary. They can be life threatening, and the severity can change with little or no warning. And accidents can sometimes happen, even when the utmost care is taken. But generally, with care and precaution, people with food allergies can be kept as safe as possible. And with a little extra effort, the diet doesn't have to be boring or bland - it can be delicious, and fun too!
