A Vegetarian Pair

My new bento box came yesterday! After eyeballing them and lusting after them for two years, I finally ordered a Lunchbots box. And so far I like it. Shiny!

Lulu wanted to take a Thermos of channa masala to school for lunch, so it was the perfect opportunity to break in the new box by packing sides and a snack.



Everything packed up neatly in pretty shiny dishes ~ she liked that a lot.

Channa masala is a vegan chickpea and lentil soup. I think it has curry, garlic, and tomatoes in it, too. Delicious stuff! It's Lulu's favorite right now. The thermos kept it nice and warm through lunch. The little drink bottle holds iced apple juice.


On the side she also has mango chunks and cucumber slices, double chocolate vegan zucchini bread, raisins, and a cereal bar for a snack. The zucchini bread is yummy - I use applesauce and a little coconut oil instead of the butter, and ground flax meal instead of eggs. It reduces the fat by quite a bit and tastes great!


For the Dude I packed up an ovo-lacto vegetarian lunch of spinach dip with sourdough baguettes, tomatoes and strawberries from my garden, and tortilla rounds with freshly made guacamole, all packed into a Laptop Lunch box.


To keep the guacamole from making a mess inside the box, I used pieces of silicone baran to keep it in place. The Laptop Lunch individual sections also come with lids, which helped to prevent any leakage.


The Dude reported back that the lunch was good, but "not very filling." He said it needed a little more protein of some kind. Maybe a couple hard boiled eggs. Since tofu and nuts are out for now due to Beaker's allergies, it can be hard to find non-meat protein sources that are filling enough for someone who does heavy lifting at a physically demanding job for a lot of hours each day. I would love any tips you all can offer.

Gluten, Soy, & Nut Free Vegan Pancakes




Since finding out that Beaker is allergic to a long list of foods, we have gotten pretty good at keeping his food safe for him while also serving him tasty meals that he will eat. We have done well at finding alternatives for him for most of the foods that he loves best. One thing I have struggled with is pancakes. Especially since the test results came back with egg and dairy reactions! How on earth do you make pancakes with no eggs, dairy, soy, wheat, or nuts that are still edible and tasty enough to eat?

Gluten, Soy, & Nut Free Vegan Pancakes

Ingredients:
2 cups gluten, soy, and nut free all purpose flour
2 cups coconut or rice milk
1 Tbsp sugar
1/2 tsp salt
2 tsp baking powder
3 Tbsp coconut oil + extra for cooking
2 Tbsp ground flax
1 tsp GF vanilla
6 Tbsp water

First, measure water and flax meal into a small pan. Heat on medium, stirring well with a whisk. When water comes to boil, turn off the heat and keep whisking another minute or two. The flax will develop a thick consistency, similar to raw egg whites. Set aside to cool.
In medium mixing bowl blend together flour, sugar, salt, and baking powder. Add milk substitute, vanilla, coconut oil, and prepared flax mix. Whisk together well.
In a small pan or griddle heat a small amount of coconut oil. Add a small scoop of pancake mix and cook until air holes begin to appear on top. Flip and cook until done.

The number of pancakes you can make depends on their size. I made them on the larger side of medium sized and was able to make 10 from this recipe.



These were a HUGE hit in our home. Beaker ate four helpings! They were delicious topped with a handful of thawed out frozen blueberries and a few sliced strawberries on the side. Light, fluffy, and just the right amount of sweet! The kids loved them and are requesting them for dinner again very soon.

They also made a great take-along breakfast for an early morning appointment the next day!


This took about five minutes to make. I used our CuteZCute frog sandwich cutter to pop out the pancake shapes, with organic fruit leather for the facial features. Beaker also has a little cup of halved grapes, two whole strawberries, and a Mini Dipper with a bit of syrup on the side for dipping. Easy, fast, delicious, and allergy safe meal on the go for an active little guy. Perfect!

A Dalek-table Lunch

Did you know that today is a palindrome? Well, it is! The date, in standard US format, is 3-13-13, or 31313, which is the same read front or back. Nifty! In fact, all of the 'teen' days this March are palindromes.

In honor of that geeky little factoid, and for just because, G-man requested a Doctor Who lunch for today. More specifically, he wanted a Dalek. The real challenge is that G is super picky due to food aversions and sensory issues, and his school is nut-free so his standard home meal of peanut butter is out. This is what I came up with:


He has a Dalek-ish Sunbutter and honey sandwich on whole wheat white bread. I used honey roasted sunflower seeds and sesame sticks for the accents, with a pretzel stick for the plunger-arm and a Sunburst candy coated sunflower seed for the red light 'eye', all stuck to the bread with a little bit of honey. The 'backdrop' is just the heel of the bread, for a little color contrast.


His Dalek is festively dressed for St. Patrick's Day!


G also has green grapes and blackberries, CheezIt snack mix, Pirate's Booty, and two chocolate gold coins.


I placed a couple of napkins inside to keep everything inside from shifting around, and then used dry erase marker on the Easy Lunchbox lid to sketch out a quick picture for him.
